Breakfast Bowls

Ingredients:

  • 2 cups diced potatoes
  • 6 eggs
  • 1/2 package bacon
  • 1/2 lb sausage
  • 1/2 cup shredded cheese
  • 1 tbsp olive oil
  • 2 tbsp butter
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp Paprika
  • 1/2 tsp Oregano
  • Salt to taste 
  • Pepper to taste

Directions:

  1. Add olive oil, butter, potatoes, and seasonings to a large skillet, stir, cover, and cook on medium-low heat stirring once or twice until potatoes are fork tender (10-15 minutes)
  2. While the potatoes are simmering, cook the bacon and sausage. Chop the bacon into bite sized pieces.
  3. Add the bacon and sausage to the potatoes and turn the heat up to medium-high, and add shredded cheese on top. Cover and add a tbsp of water to create steam so the cheese will melt. This should only take a few minutes
  4. Scramble the eggs. Add one serving of eggs to a plate and top with the potatoes, sausage, bacon, and cheese.

**Optional: add toppings such as green onions, sour cream, hot sauce, or even make a breakfast burrito out of it!
