
Ingredients:
- 2 cups diced potatoes
- 6 eggs
- 1/2 package bacon
- 1/2 lb sausage
- 1/2 cup shredded cheese
- 1 tbsp olive oil
- 2 tbsp butter
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp Paprika
- 1/2 tsp Oregano
- Salt to taste
- Pepper to taste
Directions:
- Add olive oil, butter, potatoes, and seasonings to a large skillet, stir, cover, and cook on medium-low heat stirring once or twice until potatoes are fork tender (10-15 minutes)
- While the potatoes are simmering, cook the bacon and sausage. Chop the bacon into bite sized pieces.
- Add the bacon and sausage to the potatoes and turn the heat up to medium-high, and add shredded cheese on top. Cover and add a tbsp of water to create steam so the cheese will melt. This should only take a few minutes
- Scramble the eggs. Add one serving of eggs to a plate and top with the potatoes, sausage, bacon, and cheese.
**Optional: add toppings such as green onions, sour cream, hot sauce, or even make a breakfast burrito out of it!
